This Sudan Rume lot was introduced to us by our good friend Andrés Martinez and produced by Alex Bermudez at El Paraiso. This coffee is traditionally washed, resulting in a delicate and tea-like expression of a unique variety.
In the cup
A complex and clean cup, we taste fresh citrus reminiscent of bergamot and lemon tea. This coffee has a deep sweetness that reminds us of raw sugar and honey. This coffee has a silky body and a sweet finish.
About The Producer
The Bermudez family are absolute geniuses when it comes to methodology in coffee processing. Rather than using standard anaerobic fermentation tanks, they uses precise bio reactors to ferment the product. They measures everything from time, temp, ph, sugar content and microbial load. We have come to know Diego and Finca El Paraiso's team as the world leaders in coffee processing.
Processing
The coffee cherries are carefully selected and sorted prior to fermentation. This lot is double fermented prior to washing. The first fermentation takes place in cherry fermentation tanks for 24 hours. After depulping, the cherries are fermented again in a tank with an added formula made from their natural mucilage. This secondary fermentation increases the natural attributes of the coffee and occurs for 48 hours. The coffee is then traditionally washed and dried.
Variety
Sudan Rume is a very unique variety. It’s a hybrid cultivar originating from the Boma Plateau. The harvest is often incredibly small, but we truly believe this coffee is a great example of quality over quantity. We enjoy Sudan Rume for its sweet yellow/red fruit profile and unique complexity.
