He wanted to plant more coffee and different rare cultivars like Geisha. This year is the fourth year he was able to produce Geisha coffee from this new farm and the quality is (as expected)\u003c\/span\u003e\u003cspan class=\"Apple-converted-space\"\u003e  getting slightly better every year.\u003c\/span\u003e\u003cspan\u003e\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eAlthough it is not as expressive as the Geisha coffees we buy from Finca el Puente further south in Honduras, this is still a delicious coffee with delicate and subtle floral and fruity flavours.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eThis particular lot was processed with a slightly different protocol than his Pacas coffees from Nacimiento. Last year we asked Jobneel to avoid de-pulping the cherries right after they were picked and instead let the coffee cherries rest over night and to de-pulp the cherries the following morning. This means the coffee cherries will start a slight fermentation prior to being de-pulped and it also means the parchment coffee is dry-fermented in a tank for 24 hours before washing. This has added a more intense fruity character to the coffee without it being overly fermented in any ways.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eHowever, during my visit in march 2025, I realised that Jobneel had built a new wet mill by his house, which is situated at lower altitude than his farms. This meant the fermentation was a lot faster due to the hotter climate. Like last year Moises separated all pickings from his Geisha trees and I was fortunate to be able to select my favourite lots. \u003cspan class=\"Apple-converted-space\"\u003e This particular lot is from their first picking period in 2025.  \u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan class=\"Apple-converted-space\"\u003eDespite having extremely challenging weather conditions with excessive rain and some nights with frost during the harvest, Marysabel and Moises were able to produce clean and aromatic Geisha this year too. \u003c\/span\u003e\u003cspan class=\"Apple-converted-space\"\u003eMoises said that almost 50% of the beans had frost damage and had to be sorted out. Fortunately they have their own dry mill so they were able to pass the coffee through the different sorting stages several times until the coffee was up to their and our quality standards.   \u003c\/span\u003e\u003cbr\u003e\u003cbr\u003eThe first pickings are as expected slightly less intense than the later harvest we are expecting to arrive later this year, but this is still a beautiful example of the Geisha coffee that Finca el Puente is known for.\u003cbr\u003e\u003cbr\u003eWhen I am brewing this coffee with a V60 or filter coffee method, I sometimes experience a bit slow drawdown time during brewing (time for water to filter through the coffee). If you have the same experience I recommend that you do not grind coarser to compensate for this but rather let it take some more time to make sure the coffee is extracted well. It's a Geisha, grown at high altitude, with a classic Anaerobic fermentation before drying in cherry - and the taste profile it delivers is exactly what you'd expect. \u003c\/p\u003e\n\u003cp\u003eAfter ripe cherries are picked, they're taken down the valley to the location where they process their coffees - it's a lot warmer, and the fermentation process, and drying is more straight forward there. They also have extended their range of varieties to Bourbon, Pacamara, Tipica, Yellow Tipica, SL28, Kenia and Geisha to name a few. The annual production of the 60 hectare farm land is around 1000 bags of green coffee. All coffees are separated by farm, cultivar and picking date. The same families that have returned to work at the farm for 14 years are handpicking the coffee. The 60 pickers have been trained to only pick the perfectly ripe cherries and also to sort the cherries after the picking. This is hard work but very important to be able to produce delicious coffee.\u003cbr\u003e\u003c\/p\u003e\n\u003cp class=\"\"\u003eWe have been working with Oscar and Luis since 2012. After this process the coffee is moved to drying tables without being rinsed and is therefore taking on a dark colour, hence the name “Black Honey”.
